Cold Strawberry Dessert Recipe

The “ cold strawberry dessert ” is designed for those who love to indulge in a delicious and regenerating moment, without compromising their diet. Perfect as an evening dessert or a protein breakfast in the morning , it is suitable for those following a low-calorie diet, a balanced eating style or simply looking for a healthy alternative to packaged desserts.

These cold strawberry desserts are quick, customizable, and crowd-pleasing—whether you’re craving creamy, crunchy, or fruity!

Cold Strawberry Dessert Recipe

Preparation times

  • Active preparation: 10 minutes
  • Cooking/heating strawberries: 5 minutes
  • Rest in the fridge: at least 6 hours (ideally overnight)
  • Total: about 15 minutes active + rest
  • Servings: for 2 people
  • Calories: 90 per 100 grams

Ingredients

  • 150 g of fresh strawberries (or frozen)

  • 45 g of oat flakes

  • 100 g of plain or protein yogurt

  • 100 ml of vegetable milk (e.g. soy or almond)

  • 5 g of neutral gelatine (optional)

  • 1 tablespoon chia seeds (approx. 10 g)

  • Sweetener to taste (optional)

Procedure

  1. Creamy base: in a glass container (preferably rectangular), pour the oats, chia seeds and yogurt. Add half of the plant-based milk and mix well with a spatula or spoon until the mixture is uniform. Pour the remaining milk, mix again, close with the lid and put in the fridge.

  2. Strawberry Compote: If the strawberries are frozen, place them in a saucepan over low heat for about 5 minutes until they soften and start to release liquid. Add the neutral gelatin powder, mix well to avoid lumps and make the consistency slightly thicker. Sweeten to taste if the strawberries are too acidic.

  3. Assembly: Pour the hot strawberries on the yogurt and oat base, distributing them evenly. Also add the juice released during cooking. Close with the lid and place in the fridge overnight. In the morning you will find a layered, creamy, fresh and compact dessert/collation.

This strawberry dessert is a nutritious treat that you can enjoy every day. It keeps perfectly for 2–3 days in the refrigerator, it is easy to transport and you can customize it by adding chopped dried fruit , bitter cocoa or a teaspoon of peanut butter.
