Ingredients
- 6 potatoes
- 1 carrot peeled and grated
- 1 tomato sliced
- 5-6 fresh spring onions, sliced
- 1 chopped onion
- 80 g of wholemeal flour
- 3 eggs
- 200 ml of milk
- 150 g of grated light galbanino
- 2 tablespoons olive oil
- As much chopped parsley as needed
- As much salt and pepper as needed
Preparation
- First peel the potatoes, grate them into a bowl, cover them with water and set them aside for the necessary time.
- Now pour a drizzle of extra virgin olive oil into a non-stick pan, add the chopped onion, brown it , add the peeled and grated carrot, mix and let it soften .
- Now drain the potatoes, place them in a clean container, add the onion and carrot sautéed in a pan, mix and set aside.
- Break the eggs into a bowl, beat them with a hand whisk, add the milk, mix, incorporate the flour in 2 steps, stir to obtain a batter and incorporate 2 tablespoons of olive oil, stir, season with salt and pepper and combine.
- Add the batter to the potatoes, add the fresh spring onions cut into rounds, mix well and transfer everything into a round springform pan lined with baking paper.
- Finally, cook in a preheated oven for 30 minutes at a temperature of 200°C.
